This course explores the foundational knowledge of human nutrition science and lifestyle behaviors as determinants of health, wellness, and prevention of chronic disease. The processes of digestion, absorption, metabolism, and excretion, and the roles macronutrients (carbohydrates, fats, proteins) and micronutrients (vitamins and minerals) are central to our understanding of nutrition. Learners will make essential connections among the chemistry, biology and behavioral sciences to be able to discuss theoretical and practical application of recommendations for nutrients and energy throughout the lifecycle. 3/0/0
